My New Year's Day was a cold rainy one spent furniture shopping because our couch of too many years hit rockbottom. Literally... the bottom of the couch hitthe ground.

How does that even happen?

We were ready for a warm, comforting, heartystick to your ribsmeal. The problem was that I didn't have anything planned for our dinnerand we were already starving. We needed something to put together fast..... the hanger was very real.

This is the exact moment when I said "Man I wish I had put together my gluten free slow cooker chicken cacciatore and then this would not be an issue".

  • 4 boneless skinless chicken breasts
  • olive oil
  • minced garlic
  • 1 yellow onion, diced
  • 1 cup mushrooms, sliced
  • pitted black olives
  • 6-10 sprigs of thyme
  • basil, chopped
  • parsley, chopped
  • dried oregano
  • red wine (optional: See "substitutions" section below for other tasty options!)
  • 1 can of diced tomatoes, or about 2 cups fresh diced tomatoes
  • 1 can of gluten-free tomato paste
  • red pepper flakes (optional if you'd like a little spice!)

How to make gluten-free slow cooker chicken cacciatore:

  1. Place the oil in a large skillet over medium high heat and cook the chicken and garlic until both sides of the chicken have browned. Place the chicken in the bottom of a lined slow cooker.
  2. Add all other ingredients over top the chicken in the slow cooker and stir to thoroughly mix.
  3. Cook on low for 6-8 hours or on high for 3-4 hours or until the chicken is fully cook and falls apart on it's own.
  4. Enjoy over pasta, rice, quinoa, cauliflower rice, or sauteed vegetables.
