With the big game right around the corner, I have been keeping my eye out for some good game day snacks. I have finally found the award winner finger food. These Hawaiian Chicken Meatballs will blow your mind. They are sweet, savory, and have the perfect kick of pineapple. You need these for an appetizer, or serve them over rice for dinner.
I am a huge fan of pineapple and chicken combined. I am also a huge fan of game day (not because of the game, of course. I am more there for the food).
When you bring the combination of finger food, and game day together, I couldn’t be more thrilled.
I love making simple, delicious, healthy, and meaty appetizers, I know my family will love, especially the men.

We usually do wings and little smokies, but I think this year, may be taken over by our new Hawaiian Chicken Meatballs.
I made these for dinner the other night and within minutes, they were gone.
I think I’ll plan to make triple the recipe, just so everyone can at least get seconds. They are that good.

Make it into a dinner
This dish is extremely easy to make into a dinner.
Instead of inserting a toothpick, just keep the meat and pineapple in the pan (or a bowl, if you are fancy like that), and serve it over rice.
We usually serve ours over brown rice or quinoa, but any type of rice would taste great with these.
We drizzle the teriyaki sauce over it, once it is on the rice, so it gives a little flavor to the rice as well.
Your family is going to love this dish whether you serve it as an appetizer, or dinner. It’s just so tasty, I’m already dreaming about it again.
how to make Hawaiian Chicken meatballs
This recipe is incredibly easy to make, and comes together in minutes. Here is how to make it:
Step 1: Make the Chicken Meatballs
To make the meatballs, use raw (uncooked) ground chicken. This is usually found in the meat department (by the ground beef) at the grocery store.
To your chicken add one egg, one teaspoon paprika, one teaspoon onion powder, one tablespoon sugar, one teaspoon garlic powder, and one half teaspoon of black pepper.
Step 2: Mix until will combined (I thoroughly washed my hands, and combined it with my hands, or you could also use a food processor) and roll into one inch balls.
Step 3: Place on a cookie sheet and bake at 425 for 15 minutes, or until they are all the way cooked through and not pink in the middle.
Remove the meatballs from the oven and place on an olive oil rubbed pan. Let the meatballs brown on all sides, and remove from heat.
Step 4: Slice a fresh pineapple (pineapple chunks from a can would also work, just not as yummy) and using the same pan, brown the pineapple. I drizzled honey over my pineapple to give it a sweeter taste, but this is optional.
Step 5: Serve over rice, or stick a toothpick through a piece of pineapple and a chicken meatball. Drizzle with teriyaki sauce.
Step 6: Serve and enjoy!

Hawaiian Chicken Meatballs Recipe
These Hawaiian Chicken Meatballs are sweet, savory, and have the perfect kick of pineapple. You need these for an appetizer, or serve them over rice for dinner.

Ingredients
- 1 pound ground chicken
- 1 egg
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 Tablespoon sugar
- 1 teaspoon garlic powder
- ½ teaspoon pepper
- 1 fresh pineapple cubed
- 1 Tablespoon honey
- ⅓ cup Teriyaki sauce
Instructions
Preheat oven to 425 degrees F.
In a large bowl combine your chicken, egg, paprika, onion powder, sugar, garlic powder, and pepper.
Mix until well combined (mixing with hands or a food processor works best) and roll into one inch balls.
Place on a cookie sheet and bake for 15 minutes, or until they are all the way cooked through and not pink in the middle.
Remove the meatballs from the oven and place on a pan rubbed with olive oil.
Let the meatballs brown on all sides, then remove from heat and set aside.
Slice a fresh pineapple. Using the same pan, brown the pineapple. I drizzled honey over my pineapple to give it a sweeter taste, but this is optional.
Cook until pineapple is browned.
Using a toothpick, pierce a pineapple chunk and a meatball and place on plate.
Drizzle teriyaki sauce over the kabob.
