I’m a creature of habit and with the constant commotion that work brings to my days, the need to meal plan is always there.
We’ve been sticking to specific meals, but recently we decided to switch things up a bit and try to incorporate not only meatless meal nights but also carb-free nights. Below is a new favorite of ours. It’s a simple low-carb egg roll in a bowl.
This egg roll in a bowl is a delicious alternative to the classic egg roll! It’s got all the tasty flavors of an egg roll without the carbs and only takes 10-15 minutes to make – you can’t beat that!

Low-Carb Easy To Make Egg Roll In A Bowl
Ingredients:
1 lb of ground sausage, chicken, turkey or even beef
7 cups of Coleslaw mix
2 tablespoons of low sodium soy sauce orCoconut Aminos
1 tablespoon of Ginger
1 teaspoon of garlic powder
1/2 cup of green onions
For a spicy kick add 1 tablespoon of red pepper flakes!
Instructions:
Cook sausage (I use this skillet) stirring and crumbling until cooked through. Stir in Coleslaw mix, garlic, ginger, soy sauce, and stir. Top with green onions and drizzle with more soy sauce or sweet and sour sauce.

When I make this I use ground pork….and add onions, bean sprouts ,water chestnuts, mushrooms, soy sauce…………that what I use when I make actual egg rolls too.

I add onions, mushrooms, bean sprouts, water chestnuts, tamari, (which is gluten free), but I do not make egg rolls. I have used soft lettuce before to make a wrap however, and it’s yummy and very filling. I find these additional ingredients make it taste more like an egg roll.

For us, good news and bad news with this recipe. The good: not only does it taste so much like an egg roll, but it’s crazy easy to make. The bad: it tastes so much like an egg roll that I kept feeling like I was missing something and couldn’t fully enjoy it. I’ve got to brain storm something keto, crispy and chip-like to eat with this because I just want more texture. But the flavors are great.

Not quite chip like, but we use butter lettuce leaves. They’re quite a bit thicker texture than other lettuces and it tricks your mind that you’re having a “roll”! It’s got a good crunch, too!

This was delicious! Added a bit of cilantro and crushed red pepper. A little more soy sauce at the end. It was supposed to be saved for lunch for work but the family kept eating it. Back to the store for more ingredients to make it again. It’s a keeper.

This was Absolutely Amazing!! I tweeked it a little. My Dad started making egg rolls back in the 70s. Everybody Loved them! He’s w the LORD now, but we’v continued his tradition over 40 yrs now. But they are so much work. So i combined his recipe w yors, which is almost identical(other than the egg roll wrappers. 😉 He added a pkg of Ramen noodles to his w it’s beef seasoning pk, a little garlic, and a little salt and pepper. I’m so glad i found yor recipe. We can have this once a wk, instead of just on special occasions. Woo Hoo!! I’m so excited about supper tonite! Love this recipe!!!!! I started with frying onion and garlic then added the coleslaw mix (400g) plus a bag of rainbow salad (broccoli, carrot, red cabbage, kohlrabi, cauliflower- 340g) soya sauce and ginger plus I used chopped chicken. And I do freeze it no problem! I’d use any meat I had ready.

Since I couldn’t find enough coleslaw mix, I sautéed sliced baby Asian eggplants with vegan sausage in a bit of olive oil and sesame oil, before adding in the seasoning.
