I will be the first to admit, I don’t make waffles or pancakes unless they are EASY to make, made with few ingredients, or freezer friendly. Am I picky? Haha, no. I’m human in this day in age. Am I right? That being said, I have now made these paleo waffles almost every weekend in the past month because they are ……. ALL OF THE ABOVE! Oh ya! Major meal prep and weekend brunch goals ya’ll!

This simple 3-ingredient recipe is perfect for brunch, Mothers Day, or even breakfast for dinner. All you need are bananas, eggs, and a smidge of coconut flour or arrowroot starch.

Naturally sugar-free, rich in fiber, and protein. The Paleo waffles recipe is budget-friendly and as mentioned above, the waffles freeze well, so you can make enough for weekday breakfasts. Heck, I even made the batter in the blender. Blender waffles andpancakes are my jam! Gotta love easy meal prep!

Plus, the resistant starch from the banana helps to bind the ingredients. Bonus for gut health too.

  • 2 eggs and ¼ cup egg white for extra fluff
  • 2 bananas
  • 1 tablespoon coconut flour

Tips for making perfect Paleo waffles

I want to share a couple of tips for making waffles, and not just Paleo waffles; these tips are for any type of waffle.

How do you grease a waffle iron without spray?

Most of us probably already know how unhealthy non-stick cooking spray is. The key to preventing waffles from sticking to the waffle iron is to grease the cooking plates. But you can use melted butter or vegan butter to do that! Just use a silicone pastry brush to lightly coat the plates. This also helps create extra crispy edges without using real flour, ya know?

Help! How do you remove a stuck waffle?

To prevent your waffles from sticking, be sure to grease the plates well and preheat the waffle maker. If it’s not hot enough, when you add the batter, there is nothing but trouble ahead. If you do end up with stuck waffle, these tips should help you remove it.

  1. Unplug the waffle maker and let it cool down slightly.
  2. Peel away as much of the cooked waffle as you can. If you have any pools of oil or butter, use a paper towel to soak them up.
  3. If the entire surface of the plate is covered with cooked waffle, see if you can slide a silicone spatula underneath to pry it away. If that doesn’t work, soak the waffle with cooking oil and let it sit for a couple of minutes. Then, dampen a clean towel or rag to wipe the grids clean.

Don’t have a waffle maker? Not a problem; use the batter to make a Paleo pancakes recipe instead!

Just be sure to use a griddle or nonstick pan to cook them in. Also, let the batter chill in the fridge for 20 minutes before you make the pancakes. Or, instead of traditional pancakes, you can mash the bananas with an egg and omit the flour. The batter will be thick enough to form patties; cook them in a large skillet to make griddle cakes.

Ingredients

  • 2 eggs and ¼ cup egg whites (for extra fluff)
  • 2 medium bananas (almost ripe to ripe)
  • 2 Tablespoons coconut flour

Make sure you have a good butter or vegan spread to coat the waffle maker.

Instructions

  1. Place eggs, egg whites, and banana in blender or use hand blender to blend by hand. Don’t have a blender? No problem, mash until thick batter is formed.
  2. Mix in the coconut flour and blend again until smooth.
  3. Place batter in fridge to chill for 20 minutes.
  4. Heat a waffle maker on medium high. Coat with butter or vegan spread.
  5. Ladle the batter into the preheated waffle iron and cook until the waffles are golden brown and crisp. Serve immediately with topping of choice or lay on a cooling rack until cool. Store in zip close bags or freezer friendly container if you want to freeze for later and meal prep*

Notes

  • Topping ideas – maple syrup, sugar free powdered sugar or regular powdered sugar, fresh berries, butter, etc.
  • To reheat waffles, place frozen waffle in toaster and cook until heated through and crisp on the outside.
  • This batter can also be used to make pancakes. Be sure to chill batter first.
