Our delicious Summer Salmon Rice Bowl is an ultimate rice bowl recipe that is packed with all the best flavors! Made with salmon bites, charred corn, fresh fruit, feta, and an amazing homemade basil sauce. It is definitely the definition of summer in one bowl!

The Best Salmon Rice Bowl

During this time of the year we are always making our Strawberry Chicken Salad with all of our favorite seasonal fruit! We knew it was time to bring those same fresh flavors to a rice bowl recipe. Plus, swapping out the grilled chicken for fried salmon bites was the best decision. There is just something about perfectly seared salmon in the summer months. We cooked the salmon pieces on the stovetop, but feel free to toss them in an air fryer or on a Blackstone!

What You Will Need

  • fresh basil – this fresh herb brings a wonderful light & refreshing flavor.
  • Greek plain yogurt – the creamy base of the homemade dressing.
  • honey – a little bit for a touch of sweetness.
  • minced shallots – a mild flavor addition to the basil sauce.
  • rice wine vinegar – this vinegar adds the slightest bit of tanginess!
  • olive oil – an essential ingredient when making any homemade sauce recipe.
  • salt & pepper – simple seasonings that are always a must.
  • cooked rice – any variety of rice works here – jasmine rice, basmati rice, brown rice, or even cauliflower rice.
  • corn kernels – option to use canned corn, frozen corn, or we highly recommend grilling ears of corn and cutting off the corn kernels.
  • feta cheese – a wonderful cheese topping that always hits the spot!
  • avocado, strawberries, blueberries, & cherry tomatoes – love this combination of fresh ingredients, but feel free to use what you have on hand.
  • balsamic glaze – a drizzle on top for some added flavor that pairs so well with salmon.
  • fresh salmon – if you have skin-on salmon use a sharp knife to remove the skin before cooking.
  • soy sauce – add a splash in the hot pan to bring flavor to the seared salmon – feel free to sub Tamari for gluten-free!

How To Make A Summer Salmon Rice Bowl

The first steps to making this easy recipe are to prepare all of the rice bowl ingredients. Grill the ears of sweet corn and cut salmon fillets into large pieces.

Put all the creamy basil sauce ingredients in a small food processor or blender and blend on high for 1-2 minutes or until it reaches a creamy texture.

Now bring a large skillet to a medium high heat, add a drizzle of olive oil, and add the seasoned salmon to the hot pan. Sear on all sides. Towards the end of the cook time, add the soy sauce, and toss to coat.

Finally, it is time to build the salmon bowl. Start by dividing the rice, corn, avocado, berries, and tomatoes between two bowls. Add the salmon and top with some balsamic glaze and basil sauce.

Best Ways To Serve A Summer Salmon Rice Bowl

The beauty of this salmon recipe is that it is basically a meal in a bowl so there is no need to make any side dishes here. But if you want to add a little something, we highly recommend some grilled bread or crusty bread with a generous amount of butter! And a glass of wine or our favorite original mojito would be delicious too.

Ingredients

Creamy Basil Sauce

  • 1oz fresh basil leaves, chopped
  • 4 tablespoons plain greek yogurt
  • 2 teaspoons honey, more to taste
  • 1 tablespoon shallot, minced
  • 1 tablespoon rice wine vinegar
  • 1/2 cup extra virgin olive oil
  • 2 pinches kosher salt

Other Rice Bowl Ingredients

  • 2 cups your choice of rice, cooked
  • 1 cup grilled corn, kernels cut off cob
  • 1/2 cup feta cheese, crumbled
  • 1 avocado, sliced
  • 1 1/2 cup strawberries, quartered
  • 1 cup blueberries
  • 1 cup cherry tomatoes, halved
  • balsamic glaze

Salmon Bites

  • 8oz skinless salmon, cut into 1 inch chunks
  • 1 tablespoon olive oil, divided
  • salt and pepper
  • 1 tablespoon soy sauce

Instructions

  1. Sauce: Add Sauce ingredients to a small food processor. Blend until smooth. Taste and add additional honey for sweetness, if desired.
  2. Prep Other Ingredients: Make sure the other ingredients are prepped and ready to go.
  3. Cook Salmon: Place salmon chunks in a large bowl. Add 1/2 tablespoon olive oil and toss to coat. Season with salt and pepper. Bring large cast iron skillet to medium-high heat. Add approx. 1/2 tablespoon olive oil; swirl to coat the pan. Add salmon bites and sear on all sides. Move around pan until fully cooked. Just before they are done cooking, add the soy sauce to the pan and toss. Transfer to plate.
  4. Build Bowl: Divide rice, corn, feta, avocado, strawberries, blueberries, and tomatoes between 2 bowls. Add salmon on top and drizzle with balsamic vinegar. Add some Creamy Basil Sauce to the bowl and enjoy!
